Competition in honor of 100th birthday of Latvia. PART 1 - PASTRY COOK.

The Restaurant Service School hosted a competition for our upcoming catering professionals.
On the 1st day our pastry cooks showed what they learned in 2 months.
The theme of the competition was "Desserts for Latvia."

The Restaurant Service School hosted a competition for our upcoming catering professionals.
On the 2st day our chefs showed what they learned in 2 months.

In honor of the of Latvia 100 , the theme of the competition was "Food for Latvia 100" 

Half of our chefs are currently in the field of practice and work hard, the competition is not over yet, and here's just a little insight ...

The School of restaurant service (Restorānu servisa skola) has celebrated its 25 year anniversary! Thank you all for being with us on this beautiful festive day!

 



Mousse Cakes

Chocolate cake with cherries, cake of mango and passion fruit mousse, strawberry cake ... all of this we learned to cook at the master class / seminar "Mousse Cakes". Thanks to the confectioner of the restaurant "Ferma" Airita Jurcika, we wish all our participants a fresh and delicious summer cake season!

 

Masterclass with Kikkoman

In the end of April we organized the extraordinary informative KIKKOMAN BBQ masterclass, where everyone had the opportunity to get acquainted with the details of tastes of “Kikkoman” sauces and with various options to use them in summer season menu.

Take a closer at the course of the masterclass, so that you would also get new ideas and desire to prepare something tasty.

While waiting for the spring to come, yesterday we held a colorful and full of inspiration Easter desserts masterclass together with Airita Jurcika, the pastry chef of Ferma restaurant.

CRUFFINS – Feast for the eyes and taste buds!
On March 14, we have held an exciting CRUFFINS master class in the Restaurant Service School. Together with Airita Jurcika, pastry chef of restaurant "Ferma", we made cruffin dough, learned the right dough folding technique, filled cruffins with different creams and decorated them. Cruffins were not only tasty, but also beautiful. Excellent result! We thank Santa Maria for surprise gifts and all participants for participating in the master class.

EU funds adult education project for professional development education

Workers aged 25 and over! Applying for the #EUfunds adult education project for professional development education programs in RSS has started:

  • Gluten-free products
  • Recent trends in cooking

 

TUITION FEES:

  •  The tuition fees are 90% covered by EU funds and the state, 10% is the worker's co-payment, which can also be covered by the worker's employer;
  • For employees with low-income or poor person status the training is free of charge.

 

WHO CAN APPLY

Workers:

  • From the age of 25 to the unlimited age;
  • With completed primary education.

Master-class "Exotic fruits and vegetables, their use in desserts and main courses" in cooperation with VIAA (STATE AGENCY FOR THE DEVELOPMENT OF EDUCATION)

On March 2, we were visiting Valmiera Technical School, where chefs Māris Astičs and Tomass Godiņš together with young students took part in exciting master classes dedicated to exotic fruits and vegetables, and together with confectioner of "Ferma" restaurant, Airita Jurčika, students had an opportunity to cook several exotic desserts.

SEMINARS IN LATVIA SCHOOLS IN COOPERATION WITH VIAA (State Agency for the Development of Education)

On February 23, industry professionals - chef of the restaurant "Ferma" Māris Astičs and chef of the restaurant "Muusu" Kaspars Jansons visited Rezekne College, where they, together with students, participated in creative workshop "New taste of dishes of different regions. Preparation and serving of dishes of different nations".  On February 26 and 27 together with the students of Daugavpils Trade Vocational Secondary school they drew inspiration for celebration of Latvia’s hundred year anniversary during the Master class "Recipes for the Hundred years of Latvia. Latvian classic dishes in modern variant", where together with students’ people gained theoretical and practical knowledge about modern cuisine and innovative methods of cooking.

Interesting and full of new knowledge, master class "The art of making hot drinks. Modern preparation and serving of non-alcoholic cocktails" was prepared by the award-winning owner and bartender of the restaurant-cocktail-bar "Balzāmbārs" Andris Reizenbergs together with the senior bartender of "Ferma" restaurant Alvins Matisāns. During Master-Class young people had an opportunity to supplement their theoretical knowledge of art of coffee making, as well as preparation of modern cocktails, in turn, during the practical part demonstrations were held, giving opportunities for cooking together and degustation.
