Competition in honor of 100th birthday of Latvia. PART 1 - PASTRY COOK.

The Restaurant Service School hosted a competition for our upcoming catering professionals.
On the 1st day our pastry cooks showed what they learned in 2 months.
The theme of the competition was "Desserts for Latvia."

The Restaurant Service School hosted a competition for our upcoming catering professionals.

The School of restaurant service (Restorānu servisa skola) has celebrated its 25 year anniversary! Thank you all for being with us on this beautiful festive day!

 



Mousse Cakes

Chocolate cake with cherries, cake of mango and passion fruit mousse, strawberry cake ... all of this we learned to cook at the master class / seminar "Mousse Cakes". Thanks to the confectioner of the restaurant "Ferma" Airita Jurcika, we wish all our participants a fresh and delicious summer cake season!

 

Masterclass with Kikkoman

In the end of April we organized the extraordinary informative KIKKOMAN BBQ masterclass, where everyone had the opportunity to get acquainted with the details of tastes of “Kikkoman” sauces and with various options to use them in summer season menu.

Take a closer at the course of the masterclass, so that you would also get new ideas and desire to prepare something tasty.

While waiting for the spring to come, yesterday we held a colorful and full of inspiration Easter desserts masterclass together with Airita Jurcika, the pastry chef of Ferma restaurant.

CRUFFINS – Feast for the eyes and taste buds!
On March 14, we have held an exciting CRUFFINS master class in the Restaurant Service School. Together with Airita Jurcika, pastry chef of restaurant "Ferma", we made cruffin dough, learned the right dough folding technique, filled cruffins with different creams and decorated them. Cruffins were not only tasty, but also beautiful. Excellent result! We thank Santa Maria for surprise gifts and all participants for participating in the master class.

EU funds adult education project for professional development education

Workers aged 25 and over! Applying for the #EUfunds adult education project for professional development education programs in RSS has started:

  • Gluten-free products
  • Recent trends in cooking

 

TUITION FEES:

  •  The tuition fees are 90% covered by EU funds and the state, 10% is the worker's co-payment, which can also be covered by the worker's employer;
  • For employees with low-income or poor person status the training is free of charge.

  • From the age of 25 to the unlimited age;
  • With completed primary education.

Master-class "Exotic fruits and vegetables, their use in desserts and main courses" in cooperation with VIAA (STATE AGENCY FOR THE DEVELOPMENT OF EDUCATION)

On March 2, we were visiting Valmiera Technical School, where chefs Māris Astičs and Tomass Godiņš together with young students took part in exciting master classes dedicated to exotic fruits and vegetables, and together with confectioner of "Ferma" restaurant, Airita Jurčika, students had an opportunity to cook several exotic desserts.

SEMINARS IN LATVIA SCHOOLS IN COOPERATION WITH VIAA (State Agency for the Development of Education)

On February 23, industry professionals - chef of the restaurant "Ferma" Māris Astičs and chef of the restaurant "Muusu" Kaspars Jansons visited Rezekne College, where they, together with students, participated in creative workshop "New taste of dishes of different regions. Preparation and serving of dishes of different nations".  On February 26 and 27 together with the students of Daugavpils Trade Vocational Secondary school they drew inspiration for celebration of Latvia’s hundred year anniversary during the Master class "Recipes for the Hundred years of Latvia. Latvian classic dishes in modern variant", where together with students’ people gained theoretical and practical knowledge about modern cuisine and innovative methods of cooking.

Interesting and full of new knowledge, master class "The art of making hot drinks. Modern preparation and serving of non-alcoholic cocktails" was prepared by the award-winning owner and bartender of the restaurant-cocktail-bar "Balzāmbārs" Andris Reizenbergs together with the senior bartender of "Ferma" restaurant Alvins Matisāns. During Master-Class young people had an opportunity to supplement their theoretical knowledge of art of coffee making, as well as preparation of modern cocktails, in turn, during the practical part demonstrations were held, giving opportunities for cooking together and degustation.

Today (28.02.2018.) in the Restorānu servisa skolas training kitchen, there was a masterclass full of inspiration for confectioners, organized by PROMO Food Service together with food technologist Raimonds Rakuls.

MASTERCLASS "THE SECRETS OF MAKING AND SERVING SEAFOOD"

The School of Restaurant Services in cooperation with VIAA (State Agency for the Development of Education) on February 21 has organized a master class "Secrets of cooking and serving seafood" at Riga Technical College of Tourism and Creative Industries within the framework of the program of European Union fund "Growth and Employment".

During the master class, chefs Maris Astičs and Tomas Godiņš introduced young people to the assortment of seafood, their availability, variety, cooking methods, as well as modern trends in serving dishes while working with exclusive products such as lobsters, scallops, mussels, oysters, etc.

Christmas Desserts Masterclass

At the training kitchen of the Restaurant Service School, while preparing for the most delicious festive season, a Christmas Desserts Masterclass was brilliantly conducted by the restaurant “Ferma” Pastry chef Airita Jurcika. In the masterclass, we baked honey-cakes of various structures, as well as made Christmas Pavlova Cake and Orange Mousse for dessert. On the 20th of September, school cuisine was full with magazine "Ievas Virtuve" readers and culinary enthusiasts. Together with pastry chef's Ina Poliščenko they learned how to cook several types of biscuits. They were very delicious!

Masterclass “The secrets of making and serving hot drinks”

This week (on the 20th of September) “Restorānu servisa skola” in collaboration with ESF project “Profesionālās izglītības iestāžu efektīva pārvaldība un personāla kompetences pilnveide” organized masterclass “The secrets of making and serving hot drinks”. The hospitality teachers at the seminar learned about coffee breeds, a variety of coffee making and tea ceremony.

Masterclass “Cake Glazes” with Balt – Hellin

Yesterday (on the 21th of September) in “Restorānu servisa skola” Balt – Hellin company organized masterclass, where industry representatives were introduced to the latest cake glazes products.

GRADUATION 2016/2017

In this school year, our students have shown their knowledge, skills and talent. Each achievement is based on a long, patient and persistent work of the students and the teachers. This year the school graduated 33 chefs, 6 bakers and 3 caterers. Congratulations to all the students!

Cook examination 2016/2017

In our school kitchen, the last two days were stressful, there was an exam for cooks. The upcoming cooks had to make three dishes - snack or soup, main dish and dessert, which were judged by the commission.

Chef, chairman of the committee, Tomass Godiņš, is pleased to acknowledge that growth is felt from year to year: "The success of several students was pleasantly surprised, there were dishes that could be served in the restaurant!"

We are pleased, thanks to the students and their teachers!

Sushi masterclass with Uros Radoicic

On the 4th of July “Kikkoman” & “Cesars” organized “Sushi masterclass” with Uros Radoicic, he has been practicing at the sushi restaurant "Sukiyabashi Jior”, the Michelin Guide has awarded it with 3 stars! Restaurant owner - sushi master Jiro Ono is one of the most famous and well respected sushi chef in the world

Top Baltic sushi chefs learned lots of new things about soy sauces, sushi making, sushi design making etc.

Pastry cook examination 2016/2017

Today (10.08.2017.) at “Restorānu servisa skola” was happening pastry cook qualification exam. In the six hours, students had to make cakes, which should be made using at least five types of semi-finished products, including different flavors of creams and biscuits.

The Examination Board acknowledged that high-class pastry cooks has been prepared at the school.

The young professionals competition "SkillsLatvia2017"

We are happy and full of pride for our student Laura Anča for taking 1st place in the profession "Chef" at the first national young professionals skills competition "SkillsLatvia2017" last weekend!

Laura was one of the 96 contestants from 30 Latvia's vocational education institutions, who showed their skills in 16 different professions, and after three intense days of work she was given a gold medal and cash prize by "Pavāru klubs" chairman of the board Raimonds Zommers at the awards ceremony.

Pastry competition

To prepare our students for their final exam and create a little bit of intrigue as well, we organized a competition "Cake - season" for our pastry chef group.
The main ingredient of the competition was rhubarb and in the "black box" there were walnuts and green apples.

Congratulations to the 1st place winner Rēzija Kļaviņa who also got the main prize - a 30 EUR gift card from "Gemoss", the 2nd place winner Marika Bušmane and the 3rd place winner Dace Celma, who also got a "Favorite" award from her teachers Jekaterina Dorožko and Solvita Noze.

International Culinary competition of Southern Europe

Ina Poliščenko and Māris Astičs - our chef team from Latvia got a silver medal (team of the year) at the 10th International Culinary competition of Southern Europe in Greece!

Chef Māris Astičs receveid not only a gold medal (grand prix) in the category "black box", but also got a silver medal in the fish category, and our pastry chef Ina Poliščenko received a gold medal in the restaurant dessert category!

We're incredibly happy and proud about our colleagues and their success!

Semi-final of the young professionals competition

A visit from Heston Blumenthal

For Restaurant Service Shool it was a true pleasure to host such an honorable culinary world persona – three Michelin star chef of “The Fat Duck” restaurant Heston Blumenthal and his crew. We can surely say – the kitchen has received his blessing from the Master.

We are honored that the chef also found time to pay a short visit to restaurant "Ferma".

This week (on the 24th and 25th of January) “Restorānu servisa skola” visited Daugavpils where in collaboration with “Valsts izglītības attīstības aģentūra” organized masterclasses "The secrets of cooking and serving game meat, lamb and beef" and "The secrets of making and serving coffee. Modern trends in making and serving non-alcoholic drinks." at "Daugavpils Tirdzniecības professionālā vidusskola" in association with European Union fund operational program “Growth and employment” 7.2.1. in support of the specific goal “Increase the accessibility to education and employment of young people who are not involved in any kind of training, education or employment within the Youth Guarantee” under the “Realization of the initial vocational education programs within the Youth Guarantee” (agreement No. 7.2.1.2./15/I/001) project.

Jānis Viļumovs shared his knowledge of making a great coffee and Inguss Reizenbergs demonstrated how to make modern non-alcoholic drinks while chefs Māris Astičs and Tomass Godiņš told the students about the variety of meat.

Yesterday (on the 19th of January) “Restorānu servisa skola” in collaboration with “Valsts izglītības attīstības aģentūra” organized a masterclass called "Modern trends for making and serving desserts" at "Kuldīgas tehnikums" in association with European Union fund operational program “Growth and employment” 7.2.1. in support of the specific goal “Increase the accessibility to education and employment of young people who are not involved in any kind of training, education or employment within the Youth Guarantee” under the “Realization of the initial vocational education programs within the Youth Guarantee” (agreement No. 7.2.1.2./15/I/001) project.

Together with the students pastry chefs Ina Poliščenko and Dina Gira made macaroons, chocolate mousse, chia seed pudding, as well as lots of different figurines out of marzipan.

Yesterday (on the 17th of January) “Restorānu servisa skola” in collaboration with “Valsts izglītības attīstības aģentūra” organized a masterclass called "The secrets of making and serving seafood" at "Liepājas Valsts tehnikums" in association with European Union fund operational program “Growth and employment” 7.2.1. in support of the specific goal “Increase the accessibility to education and employment of young people who are not involved in any kind of training, education or employment within the Youth Guarantee” under the “Realization of the initial vocational education programs within the Youth Guarantee” (agreement No. 7.2.1.2./15/I/001) project.

During the masterclass Māris Astičs and Ina Poliščenko introduced the students with seafood assortment, it's availability, diversity, cooking methods, as well as modern trends in food presentation while working with exclusive products like crawfish, scallops, mussels, oysters etc.

2015/2016 Graduation

Last Saturday another great, creative and inspiring school year came to an end!
Gratitude to the teachers for their strength, patience and all the hard work!

There are twenty-seven chefs, seven pastry chefs and five food service managers amongst this year’s graduates. Congratulations to all the students! Well done!

BBQ masterclass

A look back at the “Kikkoman” & “Cesars” “BBQ masterclass” at the beginning of summer led by chef Māris Astičs in collaboration with “Restorānu servisa skola”!

We learned lots of new things about soy sauces and other “Kikkoman” & “Cesars” products and started the barbecue season with lots of different treats!

“Restorānu servisa skola” in collaboration with “Valsts izglītības attīstības aģentūra” from the 6th until the 15th of June, 2016 organized a lot of different masterclasses in association with European Union fund operational program “Growth and employment” 7.2.1. in support of the specific goal “Increase the accessibility to education and employment of young people who are not involved in any kind of training, education or employment within the Youth Guarantee” under the “Realization of the initial vocational education programs within the Youth Guarantee” (agreement No. 7.2.1.2./15/I/001) project.

Industry professionals Māris Astičs, Tomass Godiņš, Ina Poliščenko, Gunta Stepanova, Jānis Viļumovs and Inguss Reizenbergs told, showed and teached the students of “Rīgas radošās industrijas tehnikums”, “Rēzeknes tehnikums”, “Valmieras tehnikums”, “Daugavpils Tirdzniecības profesionālā vidusskola” un “Liepājas Valsts tehnikums” various pearls of wisdom about working at restaurants in masterclasses “Modern Latvian cuisine, unique products grown and manufactured in Latvia – Latvia’s pride”, “Coffee – the secrets and diversity of making it. Coffee deserts.”, “Seafood and shrimp on the menu”, “Restaurant desserts, their diversity. Creating decorations out of chocolate, marzipan and sugar.”, “Modern trends for cooking, decorating and serving a main course”, “Making and serving non-alcoholic cocktails” and “Modern trends for cooking at a low temperature”.

Masterclasses in collaboration with VISC – “Innovations in cooking”

“Restorānu servisa skola” in collaboration with “Valsts izglītības satura centrs” from the 10th of December, 2015 until the 27th of April, 2016 organized continuing education course “Innovations in cooking – challenge in professional education” for the teachers from Latvia’s cooking schools and also for the enthusiasts of the field to improve their knowledge!

Head chefs Māris Astičs, Raimonds Zommers, Ingmārs Ladigs, Kaspars Jansons, as well as sous chefs Ina Poliščenko, Roberts Abrams and pastry chef Jānis Kairis shared their knowledge and encouraged the participants to join them – cooking and tasting the food at masterclasses “Modern trends for using cereals and seeds in recipes”, “Restaurant desserts”, “Seafood and shrimp on the menu”, “Finger food – decorating and serving”, “Different kinds of meat.  Steaks”, “Modern Latvian cuisine, unique products grown and manufactured in Latvia – Latvia’s pride”, “Secrets of Asian cuisine. Wok.”, “Vegetarian cuisine and gluten-free foods”, “Oil and vinegar variety and how to use them in salads and main courses” and “Cooking in a thermomix”.

2015/2016 Christmas event

Take a look at how "Restorānu servisa skola" students created a wonderful holiday feeling by organizing an amazing event week before Christmas! We enjoyed great appetizers served on creatively decorated tables and competed at many different games that the organizers of the event had adjusted to their profession!

ESF Projekts

SIA "Restorānu servisa skola" iesaistījies ESF projekta «Profesionālo izglītības iestāžu audzēkņu dalība darba vidē balstītās mācībās un mācību praksēs uzņēmumos» realizācijā (Nr. 8.5.1.0/16/I/001).

Projekta realizācijas laiks: 2017. gada 27.janvāris līdz 2023. gada 31. augustam.

Projekta mērķis ir palielināt kvalificētu izglītības iestāžu izglītojamo skaitu pēc to dalības darba vidē balstītās mācībās vai darba devēja vadītās praktiskās mācībās un mācību praksēs.

Projekta mērķa grupa ir izglītības iestāžu izglītojamie, kas mācās profesionālās vidējās izglītības un arodizglītības programmās.

Projekta ietvaros mērķu grupas dalībnieki, no projektā iesaistītajām profesionālajām izglītības iestādēm, tiek apmācīti (teorētiski un praktiski) pie uzņēmējiem (darba devējiem), ar ko LDDK noslēdz sadarbības līgumu par šādu apmācību īstenošanu. Līdz ar to, mērķa grupas dalībnieks iegūst zināšanas un iemaņas, darbojoties reālajā darba vidē, bet darba devējs pats sniedz audzēknim zināšanas, kas nepieciešamas konkrētajam profesijas pārstāvim.

Projekta izmaksas tiek segtas 85% no ESF (Eiropas Sociālā fonda), 15%no Latvijas valsts budžeta finansējuma.
